Wild Mushroom Sauté
Butter or Olive Oil
Diced Shallot or Onion
Wine or Stock
Melt butter or heat oil in a sauté pan or wok. Sauté shallots until tender and fragrant.
Add mushrooms, stir and sauté until liquid is released and reduced.
Deglaze pan with wine or stock.
Season to taste.
Add to soup, sauce or enjoy as a side.
Add garlic slices or puree near the end
Add sour cream and paprika for Hungarian style treat
Add cream and chives or dill for a decadent treat
